Here is a simple cheese you may want to try

LEMON CURD CHEESE

1 Litre milk
Juice two lemons
Salt if you like just a sprinkle
This cheese needs to be eaten within three days

  1. In a medium saucepan, heat milk until it reaches 180 degrees on an instant-read thermometer. Remove from heat and stir in lemon juice. Let stand until set, about 15 seconds. ...
